This high-quality chef's knife is crafted with Silver Steel No.3, a Tsuchime-patterned finish and a walnut handle. The 80mm blade offers superior slicing and cutting. Its ergonomic design ensures comfortable handling to make your cooking experience effortless.

The Japanese word "Ko" means “small” or “short” in English, and the Ko-deba is a small Deba that is commonly used to fillet and butterfly small fish, particularly Aji (Japanese horse mackerel). The Ko-deba is useful knife for home cooks that prefer to clean and fillet the smaller sizes of fish themselves.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.
