The Gyuto is an all-purpose knife with a pointed tip and a slender blade. The pointed tip enables an easy targeted cut and helps slice meat and fish. It used to be a knife for professional chefs but nowadays is also used by households. Its curved blade helps you apply force to cut food without effort.

VG-10 Stainless Steel
VG-10 (Takefu Special Steel Co., Ltd.) is one of the most popular and highly regarded Japanese Stainless Steels for making cutlery. It has strong corrosion-resistance and can provide very good edge sharpness and edge retention. VG-10 belongs to a group of steels called "Cobalt Steels”, but it also contains Vanadium, which improves its strength, toughness and edge retention.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.

Beautiful and highly functional petty knife - VERY sharp

Excellent and highly versatile tool for precision cuts. Both for left and right-hand use (I tried both). This knife is beautifully crafted and very sharp with great edge retention. It feels too delicate for rough work on bones, but is amazing on precision cuts. Great compliment to your larger chef knife of Gyuto. Highly recommended, great fun to use, and very easy to clean. Fast shipment to North America, no problems at all.

Great beginners knife

This was my first Japanese knife back in the day. Elegant, beautiful, light, well balanced. Western handle is a great help for beginners, as is the blade, Will hold sharpness for very long, and wont rust. As for sharpness question... it depends on how much I sharpen it.
