Feel the power of professional craftsmanship with this Kiritsuke White steel #2 Honyaki Knife. This stunning piece of cutlery boasts a 240mm long blade with a premium Buffalo ebony handle. Make slicing, chopping, and dicing a pleasure with this harmoniously balanced Japanese kitchen essential!

“Kiritsuke” knifes are an all-purpose knife featured a diagonally cut-off tip. Kiritsuke knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a yanagi for vegetables, and a longer blade than an usuba for slicing fish with ease. The user needs more skill with traditional Japanese knives in order to utilize this unique kiritsuke style design properly. Traditionally, these knives are used only by the chefs as a symbol of status.

The Honyaki knives can only be made by a few skilled craftsmen in Japan in same method as traditional Japanese sword. It is an art of craftsmanship with Japanese traditional techniques, and features outstanding sharpness and durability. The production is very small, due to the difficulty and time-consuming process.

Its blade is made through Honyaki process, so the edge gets very hard and retains its sharpness for a long time.

The honyaki knives cannot be mass-produced. They are primarily for professional chefs and for the most important person because of the highest quality traditional-style Japanese knives.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

About the handle, the beautiful Buffalo Tsuba (bolster) equipped to the Magnolia Wood handle represent high-quality and excellent durability, that means made for professional originally. The handle shape of Japanese-Style Octagonal figure fits better comfortably to your hand.

A GIFT TO MY DAUGHTER

I bought this knife for my daughter and son-in-law's wedding anniversary. They were looking for a knife that could be an all around knife in the kitchen. When I saw this knife and read its description I said, this is the knife for them. They knew that I got them a real good knife because I've purchased 2 Santoku knives from Musashi. And you sell excellent knives. She told me that she loves that knife.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
