Mainly used for vegetables with a flat, rectangular blade, a flat tip and a thicker spine. Best for cutting Napa and cabbage into strips. Also suitable for peeling, chopping, rotary cutting, shaving, and making garnish.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Great knife

The craftsmanship of the Nakiri White Steel #2 knife is also top-notch. The blade is evenly ground and polished, and the fit and finish of the handle are excellent. The knife is also well-balanced and comfortable to hold, even when using it for extended periods of time. I would highly recommend!!!!

Rough and awesone

The knife arrived to western Europe 1 week after I placed the order, very well packaged. The knife looked exactly as on the website. The fit & finish is rather rough. I sanded here and there and I had to straighten the blade. This was very easy and what I expected I would have to do. It is as they call an entry level knife. But to fully enjoy the knife you actually need some skills and stones. I sharpen my knives myself and started my "fetish" a few years back. European knives at first, then ali express (still not my cup of tea), and now Japanese knives. This is my second Japanese knife and first nakiri.
The grind is concave (hollow) and one bevel slightly more so than the other. The grind is also extremely thin (laser) behind the edge. So thin that I was scared to chip it by just looking at it. This however made for an awesome cutting experience. The knife just fell through a pepper!
I must say that the profile was a little off: at the heel there was about 1 inch of the blade that was about 1 mm short. This only bothered visually, I still corrected it though. Now the blade is a little bit thicker behind the edge, but also more robust, and it still cuts like a laser. I also oiled the handle. It is D shaped for right handed people and very comfortable. The balance is right where it should be, right at the front end (tip end) of the small engraving.
I bought this knife from musashi because I like their mission.
I really like this knife, but don't you expect a knife that doesn't need work (if you want a perfect knife). It is like the old days: it is made so the owner can put it's own touch to it. Don't get me wrong: it performs very well out of the box, but better after some tlc.
