Deba is a sturdy fish knife with a solid and thick blade. The blade doesn't bend even if force is applied. It is often used to remove large fish scales, handle the bones, open the back of the fish, and cut the bones. The blade's thickness and weight can help to cut off fish heads without damaging the blade, as well as the small bones of chicken.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

Great Deba

I love this knife! It arrived with a decent edge but as with most Japanese knifes you are expected to put an edge on yourself. The knife was super easy to sharpen and is staying crazy Sharpe. I've used the knife so far two times and processed about 35 fish. This includes full filleting and splitting heads. Did mostly Bream and Red Snapper and there is no reason for me to even touch up the edge...still as sharp and looks as if it just came off the stone!

The finish and construction of the knife is very good! This is my third knife from Musashi. I'm very happy with this purchase.
