Sturdy fish knife with a solid and thick blade. The blade doesn't bend even if force is applied, so it is often used to remove large fish scales, handle the bones, open the back of the fish, and cut the bones. The blade's thickness and weight can help to cut off fish heads without damaging the blade, as well as the small bones of chicken.

Used to cut raw seafood and beef into thin slices for Sashimi, etc. Often used in Sushi restaurants. It has a long blade on only one side, keeping the food beautifully cut and fresh.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.
