The Funayuki (舟行) is a traditional Japanese knife that is used by fisherman aboard their boats; indeed, Funayuki literally translates in to English as "going on boat". These knives are often used by fishermen to clean, fillet and quality test small or medium-sized fish. However, in the past, fishermen also used their Funayuki to prepare food for themselves (either out at sea, or back at port), so the knife also had to be capable of cutting meat, vegetables and fruit - just like the similarly versatile Santoku and Gyuto.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

my first 'better' quality knife

started visiting japan in the 1980's and bought my first kitchen knives at asakusa market, tokyo. very please, not top quality but laminated and 'utility' quality. have used for many years. decided recently to but a better quality, known maker. really pleased with knife i purchased. the steel takes a great edge and the weight and balance if nearly perfect for me. was bought as a kitchen utility knife, to cut vegetables, fish and meat, everything in fact......... sharpened on a 1000, then 6000 waterstone, and really great performance. i have many japanese woodworking tools used every day, so i know how to sharpen the knife. i am very grateful for musashi offering and delivering a great range of good quality knives. i will need to buy a wooden sheath for this one when ( if ) i purchase another. domo-arigato. stephen c
