The Gyuto is the Japanese version of the classic Western Chef’s knife. It is a true multi-purpose knife that can perform wide range of tasks, can be used with a variety of different cutting techniques and is suitable for cutting the vast majority of meats, fishes, vegetables and fruits.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

This is my 1st Japanese knife and i wanted something that i would love to use but also be very appealing to look at. This knife makes the task of cutting veggies or prepping a certain item i simple and enjoyable. The knife is light, balanced excellently, sharp out of box and prefect for any chef looking for a beautiful knife to add to their collection. I recommend buying a case if you are traveling or don't have a big enough block or room on your strips.

My first japanese knife

Packaging was so nice and the attached letter was a very sweet detail. The blade is awesome. Can't be happier. One complaint I have is that the handle is a couple of degrees rotated in relation to the blade. Unfortunately it can't be unseen but I'm doing my best to overlook it since I really like the blade.

I love this knife, it looks beautiful and as its starting to patina its becoming distinctive and a personalized knife. Its sharp out of the box and holding its edge well and perfectly balanced giving good options on grip.
