A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts. Compared to a Western-style handle, the lightweight traditional Japanese handle of the Wa Petty knife moves the balance point of the knife further towards the tip, which makes it feel even more nimble and precise.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Great steel and blade geometry, with decent build quality for a reasonable price - it's a compromise that works really well for this little knife. For someone used to German knives - this feels more like a scalpel or a razor rather than kitchen utensil :)

Love these knives!! You need to really care for these knives and they will be there for you. The one month without the small one which I used daily so many times was a tough month without our favourite knife. I ordered two utility knives so we would never be without. A must have for those who love to cook.

I bought this knife as my first Japanese knife, I thus cannot really compare it, but I am very pleased with it. I ordered the extra sharp version, which in deed was super sharp on arrival. The knife is beautiful, well balanced, very nice to use. Edge retention may be a bit less than I expected, but again I have no other knife to compare it to. And, even if noticeable in sharpness tests, the loss of sharpness is very limited. In addition, I also wanted this first knife to practise sharpening with whetstone. I found it very easy to resharpen. Rust resistance is perfect so far. In the end, I thus recommand this knife, which, I think, is very good value for the money.
