A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts. Compared to a Western-style handle, the lightweight traditional Japanese handle of the Wa Petty knife moves the balance point of the knife further towards the tip, which makes it feel even more nimble and precise.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

What s great performance!!!. Heavy enough to cut the bone of poultry without any efforts. Even I guess it will be good good to use for fish like Japanese traditional knife.. Good weight and feeling.. No hesitation to recommend this items to you..

I have the knife few months. Craftsmanship of the knife is perfect. Blade is well assembled with handle. Geometry is European style and works great for me. The arc is shallow and does not require much vertical swing. There is no finger guard, which is typical for Japanese knives and I prefer it for it allows better sharpening. I also use 'bottom edge' for some small cutting and peeling work. Blade is very thin, slices amazingly. I would not use it or extremely tough items though. So no frozen foods....

This is more of a utility knife than a petty, or is at least a large petty. Sharp, light , and well balanced, feels good in the hand. I am using it for general prep. Remember, this is not stainless, keep it clean and dry.

Product features

Handmade Forging

By applying the traditional forging method, the molecules of iron, which is the material, are finely arranged, leading to the completion of a "live kitchen knife" that breathes.

Durability

The process of heating and forging each material for molding is repeated three or four times, and before carbon is released from the steel and the original power is not lost, it is quickly shaped into a blade and creates durability.

Sharpness

The blade is the most important for achieving the best sharpness. Produces uncompromising sharpness that can be sharpened at our own factory with blades.

Handle

We place the highest priority on a shape that is durable, luxurious, easy to grip, and does not get tired even after long-term use.
