Knife name: Santoku
Material: SKD11
Finish: Nickel Damascus
Handle: Octagonal Rosewood
Blade type: Double-edged
Blade length: 165mm
Origin: Tosa City in Kochi prefecture

The Santoku, which translates in to English as either “three-purpose" or “three virtues”, gained this name because it is well suited to cutting meat, fish, and vegetables. Santoku knives are often recommended as a multi-purpose kitchen knife for home cooks, and it is more commonly found in Japanese households than Gyuto knives.

The blade is a triple lamination that reproduces a traditional Damascus surface. The two Damascus outer layers are each made of 36 alternating forged layers of Pure-Nickel and SUS410 stainless steel polished to reveal a pattern that is as unique as a fingerprint.

The central core material SKD11 (alloy tool steel) used for the blade edge is a performance steel that is incredibly rich in Carbon equal to the famed Yasuki Aogami, and is tempered to the Rockwell 62-64 for exceptional sharpness and edge holding and properties.

Originally SKD11 steel was created for cutting metal. Its suitability for knife edges' comes from its resistance to abrasion and its ability to hold a cutting edge.
Also its high content of Chromium greatly contributes to the blade's anti-corrosion. Damascus outer Pure-Nickel layers will never rust.
This 73 layered material produces a rust resistant blade that will maintain its beautiful pattern perfection over the years.

A polished octagonal Ebony wooden handle enhances the beauty of each blade.
These handle shapes are found on the top professional Japanese sushi knives.
Not only a pleasure to look at, the traditional distinctive grip will aid cutting tasks that require precision.

Fine craftsmanship and top quality materials make this knife a joy to use. Well worth the investment. such a quality tool needs and deserves to be well looked after so careful use, thorough cleaning and adequate storage goes without saying, but there, I've said it!

Product features

Handmade Forging

By applying the traditional forging method, the molecules of iron, which is the material, are finely arranged, leading to the completion of a "live kitchen knife" that breathes.

Durability

The process of heating and forging each material for molding is repeated three or four times, and before carbon is released from the steel and the original power is not lost, it is quickly shaped into a blade and creates durability.

Sharpness

The blade is the most important for achieving the best sharpness. Produces uncompromising sharpness that can be sharpened at our own factory with blades.

Handle

We place the highest priority on a shape that is durable, luxurious, easy to grip, and does not get tired even after long-term use.
