The Santoku, which translates in to English as either “three-purpose" or “three virtues”, gained this name because it is well suited to cutting meat, fish, and vegetables. Santoku knives are often recommended as a multi-purpose kitchen knife for home cooks, and it is more commonly found in Japanese households than Gyuto knives.

VG-10 Stainless Steel
VG-10 (Takefu Special Steel Co., Ltd.) is one of the most popular and highly regarded Japanese Stainless Steels for making cutlery. It has strong corrosion-resistance and can provide very good edge sharpness and edge retention. VG-10 belongs to a group of steels called "Cobalt Steels”, but it also contains Vanadium, which improves its strength, toughness and edge retention.

This knife is a good-sized santoku, tall and good weight. The handle is relatively small for a western-style, giving the knife a more forward balance point. The handle isn't pretty, just clean and simple, but the blade looks great with the nashiji finish and cladding line. Quality fit and finish for the price, comfortable, sharp out of the box, and I imagine it will sharpen nicely once I put it to the stones. High value blade, definitely worth it if you're looking for a carbon steel knife with a slim western handle.

Great service and beautiful knif

This is my first Japanese knif and I'm not a professional chef so I've chosen this as for a beginner. It's a beautiful and very sharp knif. I found it's quite difficult to find genuine Japanese made knives in the UK and I'm pleased to find this website. They also attached a Japanese cherry blossom on the back of the enclosed thank you letter. It's nice touch and sweet thought. Will shop with them again.
