Traditional Japanese knife with a long and thin blade, which was originally used for cutting thin slices of raw fish - yes, sushi! Nowadays it can also be used for cutting large pieces of meat (especially for steaks) due to its long, thin blade. Typical Sashimi Bocho knives are between 240-360mm long and, according to some chefs, can be used for different kitchen tasks which require precision. Some of the distinguishing features of Sashimi Bocho knives are a Japanese handle and a chisel ground blade with an extremely small angle. Most famous Sashimi Bocho named Yanagiba. The expression “yanagiba” in Japan means “a willow”, as the blade of the knife resembles a willow leaf.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

Better than expected

I am new to sushi but I knew I wanted a decent knife to start out. The real deal. This one is that for my left hand use.
Since this one I ordered another. Went a little different direction than this one with the steel. Now I can compare them down the road.

I bought my husband two Japanese knives for our wedding anniversary. He gave me the specifics of what he wanted and the two I chose are a perfect match to his wants and left-handed needs. They are beautifully made and very efficient. Also, the knives came two days early which was wonderful. Thank you for a job well done!!

Product features

Handmade Forging

By applying the traditional forging method, the molecules of iron, which is the material, are finely arranged, leading to the completion of a "live kitchen knife" that breathes.

Durability

The process of heating and forging each material for molding is repeated three or four times, and before carbon is released from the steel and the original power is not lost, it is quickly shaped into a blade and creates durability.

Sharpness

The blade is the most important for achieving the best sharpness. Produces uncompromising sharpness that can be sharpened at our own factory with blades.

Handle

We place the highest priority on a shape that is durable, luxurious, easy to grip, and does not get tired even after long-term use.
