刃の鋼は、安来鋼(やすきはがね)の高級鋼「青鋼二号」を使用。長切れし、高い硬度と粘り強さを兼ね備えた鋼で、硬いので若干研ぎづらいという一面もありますが、その反面、一度刃を付けてしまえば、長い間切れ味が持続するという大きなメリットがあります。
焼入れにより黒くなった表面を、刃の部分以外はそのまま残しているものを「黒打ち」仕上げといいます。黒打ち仕上げは、少し無骨で「渋い」雰囲気が感じられる仕上がりです。また黒打ちの方が若干錆びにくく、伝統的な和風に仕上げる濃い色になっています。

The handles on these knives are Octagonal Oak wood dye Japanese Lacquer (Urushi) that recalls the images of Japanese tradition.
