The Japanese word "Ko" means “small” or “short” in English, and the Ko-deba is a small Deba that is commonly used in coastal areas of Japan to fillet and butterfly small saltwater fish, particularly Aji (Japanese horse mackerel) - hence the alternative name of Aji-deba, or Aji-kiri. However, it is just as adept at dealing with small freshwater fish, such as trout. The Ko-deba is useful knife for home cooks that prefer to clean and fillet the smaller sizes of fish themselves, rather than buy fish which have already been filleted.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

Superb knife that exceeded all my expectations

Well I ordered this knife at a very strange time in the UK, with movement restrictions across the country as a result of coronavirus infections.

The Japanese part of the delivery operation worked extremely efficiently and the knives ( I was given a paring knife as a gift as well) arrived in the UK after a couple of days - unfortunately it then took a UK delivery firm a week to get them from one end of our country to the other - but no worries.

The knife itself is extremely well balanced. easy to use and extremely sharp. Also it looks fantastically beautiful.

This is a great paring knife. I have a few other knives of this general type, and this particular knife is a "go to". Comfortable in my rather large hands, and exactly the size for fine work. Holds its cutting edge well, and easy to sharpen on my diamond wheel.
