The Japanese Deba, which is also called the Hon-deba (Literally, “true deba"), is traditionally used to clean and fillet whole fish, but it is also commonly used for breaking down and dressing poultry and other meat with small bones. The significant weight of the Deba is desirable because, with adequate care, the sturdy heel section of the knife can be used to cut or chop through the bones found in small and medium-sized fish and poultry.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Knife was sharp out of box. Loved the balance but a little heavy at first.

Amazing Knife

I brought this gift for my mother who loves to cook and she has been loving it. She is always very picky when it comes to knives and has never used a Japanese knife. She now wants to use Japanese knives for everything, she absolutely loves the clean cut it has. She has said that it is like cutting jelly, the knife just slices through everything it touches. The only complaint my mother has is that the handle feels a bit awkward to use after the knives she has been using. Other than that she can’t find a fault with it, good quality and super sharp. I look forward to exploring other types of knives that are like this.
