The Gyuto is the Japanese version of the classic Western Chef’s knife. It is a true multi-purpose knife that can perform wide range of tasks, can be used with a variety of different cutting techniques and is suitable for cutting the vast majority of meats, fishes, vegetables and fruits.

VG-10 Stainless Steel
VG-10 (Takefu Special Steel Co., Ltd.) is one of the most popular and highly regarded Japanese Stainless Steels for making cutlery. It has strong corrosion-resistance and can provide very good edge sharpness and edge retention. VG-10 belongs to a group of steels called "Cobalt Steels”, but it also contains Vanadium, which improves its strength, toughness and edge retention.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Damascus Stainless Steel
Here are the collection of Stainless Damascus steel blade Kitchen knives. The Japan’s latest cladding technology has made it possible to sandwich and layer almost any different materials. The results are the beautiful various Damascus patterns. It is not only for a visual beauty, but also for strength in bending and breaking, and of course, with the high performance cutting edge core of VG-10 and Sliver No.3 etc.

Correction review

I left a negative review earlier cause Musashi missed a part of my order and didn't respond to my mail. The latter was apparently because of Japanese holiday. They have by now responded so all should be sorted soon.

Outside of this experience I am very content with the Gyuto knive I use myself and the ones I've ordered as gifts for friends.

Incredible Knives

I recently bought my 4th and 5th Knives as my collection grows. I purchased the Gyuto and Sashimi to go with my Petty, Nakiri and Santoku I bought last year. The first 3 knives I use daily and have sharpened only twice in the year I have had them. They remain incredibly sharp and true. I do not use the dishwasher for the knives, but wash each by hand and ensure they are dry correctly before storing. The Gyuto is perhaps superfluous given I have the Santoku, but I couldn't resist the bigger brother. I find it well balanced and the extra length is good when cutting bigger bits of meat. The Sashimi is fantastic too, I can get incredibly thin slices of meat or fish with no effort at all. My only wish? That they would do the Bunka knife in the western handle!!

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
