This is a single blade knife. It looks like a smaller size of the Yanagiba knife. In the early spring many kinds of clams are in season, such as short neck clams, hard clams, yellow clams and egg cockles. You can enjoy various tastes and textures. Clams have to have the intestines removed. The “Kaisaki knife” is easy to handle and good for clam cleaning. The knife is also handy to clean small size fish such as big-eye flatheads or sand borers. The knife is not only for clam cleaning but also for peeling or carving vegetables and fruits, you can expect beautiful results. One Kaisaki knife can help you with various kinds of cooking.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

The handles on these knives are Octagonal Oak wood dye Japanese Lacquer (Urushi) that recalls the images of Japanese tradition.

The coating film of Urushi exudes a warm sense of intimacy when in contact with the skin that can almost be likened to the touch of an infant’s skin. With antibacterial and disinfectant properties, it is also provides an exceptional sense of security. urushi is a totally natural lacquer, and with use develops a distinct, deeply refined luster and texture which cannot be reproduced with chemically developed coating materials. This naturally fosters strong feelings of attachment and deference.

Great knife, in a great size, at a great price

I got this knife to fill a gap in my collection: a razor-sharp paring knife, small enough for detail work, large enough to carve roast chickens/pork tenderloins/etc. And I love it.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
