Bunka is a general purpose kitchen knife as Santoku and it used to be just as popular as the Santoku, but has become less commonplace in recent years. With its wider blade, the Bunka knife is suitable for cutting vegetables, while the triangle-shaped tip area is particularly useful when cutting fish and meats.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Great, light-weight knife

I have enjoyed the knife so far. It’s light weight, well balanced, and holds its edge well. It requires immediate wash and dry to avoid rusting. The handle does not do well with exposed moisture but its an expected result as it is not varnished or lacquered. Overall I really like the knife. The design is perfect for precise cutting and food prep. I don’t recommend it for fine chopping as it lacks the weight of a chef style knife for the task. It’s exactly what I expected, Musashi didn’t disappoint!
