The 170mm Kiritsuke arrived in Canada from Japan in three days.
The knife was well packaged and the photos illustrated on the MUSASHI website are accurate. The “Pear skin pattern” is unique, lending itself to both function and its unmistakable handmade finish. The irregular spine complement the knifes artisan character further paying homage to its authenticity.
Out of the box testing was remarkable with the knife producing effortless, silky smooth cuts throughout the length of its blade utilizing heavyweight glossy paper. The onion skin test was impressive with the blades edge “parking” at the most extreme angles and the traditional fingernail test yielding almost unbelievable results as the blade instantly “bit” with near zero pressure.
I would like to see the estimated HRC based on the knifes forging process, although I can say it has held its edge with three weeks of constant home use.
Its lightweight, thin profile blade makes for quick work when mincing, slicing and dicing and the knifes “Nashiji” finish is functional at preventing most foods from sticking. Potentially overlooked, I cannot emphasize how important this is feature is. My Spark Damascus knife tends to bond with each slice and when rapidly processing, this bonding effect results in food becoming airborne as each consecutive cut sticks to the blade, propelling the previous cut through the air. Julienne cut’s are executed with precision and achieved by a single cutting motion due to the Kiritsuke’s strait profile edge and sharpness.
I find the 170mm blade to be quite agile for delicate cuts and large enough for almost every task making this the most versatile knife in my kitchen.
This is definitely a hot and sexy hand-crafted knife. It cuts and slices so elegantly out of the box and having been used for a couple of weeks, I am impressed how it retains the sharpness.
From opening the well presented box and handeling the knife, to using it for the first time. I knew I purchaced something exquisite.It is beautiful and a joy to use.

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.
The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.
