The Japanese word "Ko" means “small” or “short” in English, and the Ko-yanagi is a small Yanagiba¥ that is commonly used to fillet and slice small fish, particularly Aji (Japanese horse mackerel). The Ko-yanagi is useful knife for home cooks that prefer to clean and fillet the smaller sizes of fish themselves.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Very good value knife

Good Knife Overall

I bought this knife for the JP handmade knife experience.
I would rate this knife as a smaller version of a gyuto.
The finishes ar not the smoothest and the blade was not straight but considering it is a cheap knife it's acceptable.
I polished the edge of the spine, as it had a sharp edge that was hurting my finger using pinch grip, and the handle was polished with a fine grain sandpaper and it is much smooth to touch.
It is easy to sharp (I use a King stone 1000 grit, and a leather strop) and you can obtain a very sharp edge.
Regarding the edge retention, needs to be sharpen every couple of uses.
