This single blade is reminiscent of a smaller Yanagiba knife. In the early spring, many clam varieties, including short neck clams, hard clams, yellow clams, and egg cockles, are in season, providing you with a wide variety of textures and flavours to savour. Enjoying these delicacies, however, requires you to precisely remove their intestines, which is made easy with the Kaisaki knife. In addition to cleaning clams, the knife is ideal for peeling and carving vegetables and fruits and cleaning small fish like big-eye flatheads and sand borers. Its versatility turns the Kaisaki knife into a multifunctional companion for your kitchen.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Craftsmanship did not meet expectations

I recently purchase two knives, a pairing knife and a sushi knife. They are both very sharp and have excellent feel and balance. From the front side, both appear to be made with great care. However, when inspecting the back side, both have rough grinding marks at the end of the blades. Does it affect the function of the knife?....Absolutely not. Will it prevent me from purchasing another knife in the future?....Absolutely. The thing is, I don't know anything about making a knife but I am a machinist by trade and when the details that don't matter to function are treated with less care I question the overall quality of the product. In other words, the back of the knife should be finished with as much care as the front and it simply isn't.
