Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Great little knife for the price!

It's been handling all the small knife tasks in our busy home kitchen for several weeks now. It's also been used on cardboard and even zip ties. It's great cutter and it's definately not fragile. It holds an edge we'll. So far just a quick strop has brought it back to hair popping sharp. I really love quickly cutting garlic into paper thin slices!! Overall a great knife and Musashi was great to buy from.
