This Sujihiki Blue steel #2 Kurouchi Damascus Knife is a thing of beauty. Crafted from premium grade steel and handmade Buffalo Ebony Handle, its sharp and precise blade is guaranteed to cut effortlessly through any culinary challenge. Sujihiki translates literally to 'Flesh Slicer' and it does exactly what the name suggests. It's perfect for carving and slicing roasts, turkey, raw meats, fish, and all other proteins. The extended blade length allows you to slice with one long stroke instead of sliding the knife back and forth in a sawing motion, and the reduced surface area prevents the blade from sticking to the meat. With a Sujihiki, clean slices of brisket or ultra thin will become a breeze to execute.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.

Is amazing

We loved the knife and the packaging . It was a lovely gift. The quality and finish is impeccable. We gave it a little more edge to cut more accurately but otherwise we are very happy. Unfortunately when it arrived we found out that we had to pay 100€ more for shipping information that was not estimated anywhere on your page and that took us by surprise increasing the price of the product. It would be great if that info would appear before paying or if you would facilitate the way.
