The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. The Yanagi Kiritsuke is slightly heavier with a with a blade that is wider and a spine that is thicker. The sword tip helps balance the weight of the knife and is recommended for chefs who are interested in a Yanagi but have a smaller working space. Even the simplest of tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

Blue Steel No.1 (Hitachi Metals Ltd.) is very similar to Blue Steel No.2, but the additional Carbon and Tungsten / Wolfram result in even better edge retention and toughness. The steel is perhaps most commonly seen in high-grade Japanese traditional single-bevel edged knives.

Beautiful performance... So I have been trying to get my hands on one of these for years and after finally having one I am not disappointed. It is important to know that first impressions this knife is not nearly as estheticly beautiful as other knives in a similar price point, but after you start to use you soon realize that this knife is 100% focused on performance at a high level. The steel takes a beautiful edge, it strops up extremely easy, the choile is chamfered, the spine is rounded. This knife is also super thin behind the edge, it’s edge geometry really benifits it’s performance, the D-wa handle like all my massamotos are in my opinion the most comfortable handle in the game.

Go-to Butchering Knife

It's a great knife! It's heavier than most carbon steel knivies I've used however the knife is made for butchery thus the design, weight, knife edge all shows what it is for: animal butchery. For beef, chicken, and pork products this is my go-to knife.

Excellent quality blade that cuts like no other knife I have ever owned. It is light in the hand and easily passes through everything that we throw at it.
The team at Musashi were knowledgeable, professional and courteous. The customer service was refreshing and educational.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
