Used to cut raw seafood and beef into thin slices for Sashimi, etc. Often used in Sushi restaurants. It has a long blade on only one side, keeping the food beautifully cut and fresh.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Mail arrived in a matter of 3 days to Europe and to my doorstep !

This is Aogami 2 100 per cent .
Did not come ultra sharp right out of the box.
After the finishing touches on the 6000 grit only , the sheer weight of the knife makes it pass through the paper test like a charm .

I even bought the King Whetstone from them and the flattening stone ,which easily could be brought elsewhere.

Tested on rolls as well as raw fish . Superb !

I also have had bought a Magnolia Handle as well as the excellent beyond measure Kimono Tora Knife Roll.
They all together fold nicely in the knife case including the knife !

You can't go wrong with these fellas .


Purchased this knife for my daughter. She loves it. She is a junior chef. I wish you would give the sharpening stone.

Great knife

My yanagiba knife is superb great quality and beautifully made. Great weight and comfortable handle for my small hand. The shipping is a little bit slow but once it shipped, it delivered to my door with few days from Japan to Australia. For sure I will look for another knife from Musashi and will recommend to friends.


This is a tall petty that can be used on the cutting board like a gyuto. The blade is straight, the handle centered. The edge needed to be touched up but sharpens easily. Beautiful knife. Highly recommended.
