A timeless piece for the master chef, the Yanagiba Blue steel #2 Kasumi Walnut Handle 240mm is an exquisite addition to any kitchen. Crafted from hand-sharpened Blue steel #2 and featuring a handsome walnut handle, this is a truly elegant choice for any culinary aficionado. Sharp and resilient, this knife is a lasting testament to style and quality.

The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. Even the simplest of tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

Best Knife

Excellent balance, extremely sharp. As soon as I learn to use right handed I will be using this knife for many years to come. I know I will be buying more from Musashi. I can't wait to learn the basics of sushi making since I now have my most important tool.

Broken tip

The yanagiba I received has a weird tip that seem like it was damaged. Upon closer inspection from an expert, i can confirm that the original tip is broken and Musashi had tried to replace and fix the tip. However, the tip is still not good, it was bended to the side

Merci

My new favorite knife

the knife come pretty sharp out of the box and with very few low spots when sharpening. surprisingly easy to sharpen too. I love the design of the knife and how the choil is polished, the handle has an ebony ferrule instead of buffalo horn but looks really nice, there is a slight transition at the ferrule though. Over all its a great knife that looks great and performs very well. I would 100% recommend this knife to anyone but Aogami 2 take some experience to sharpen well.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
