Yanagiba Silver Steel #3 Polished Shitan Handle 270mm

Regular price¥41,800

Traditional Japanese knife with a long and thin blade, which was originally used for cutting thin slices of raw fish - yes, sushi! Nowadays it can also be used for cutting large pieces of meat (especially for steaks) due to its long, thin blade. Typical Sashimi Bocho knives are between 240-360mm long and, according to some chefs, can be used for different kitchen tasks which require precision. Some of the distinguishing features of Sashimi Bocho knives are a Japanese handle and a chisel ground blade with an extremely small angle. Most famous Sashimi Bocho named Yanagiba. The expression “yanagiba” in Japan means “a willow”, as the blade of the knife resembles a willow leaf.

Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

■Please do not use the knife in a twisting motion.

First time customer - certainly not our last purchase though!

This was our first engagement with Musashi and we were not disappointed, the professional interaction and service, especially during the holiday season was very much appreciated. The actual yanagiba black meets or exceeds our expectations for quality and craftsmanship. I look forward to many more purchases in the future both for ourselves and dear friends.

I bought this knife for my husband for his birthday to slice sashimi and steak and it cuts like butter. The knife is very well made and great quality, such craftsmanship

Expectional handling, sharp blade and good price

To start off I want to thank Musashi for excellent shipping service and great product. Knife came in excellent condition, finished edge was put by me but edge that came from factory was great; it just needed some uraoshi touch up. Been using it for sushi and sashimi prep and it's great. Really hard steel and edge retention is awesome, the price its good for the quality of knife you are getting. Hard to beat when comparing against other name brands out there. If thinking to buy one don't hesitate, it's a gorgeous, nimble, light and thin blade. Will recomend it and buy from company again. Trust worthy and can tell they care and stand behind their product.

Beautiful and functional instrument

A perfect example of the melding of art and function, this specific-application knife is beautifully designed and finely crafted. The blade arrived honed to a very high level of sharpness, and the fit and finish of the build are exceptional. Very much outperforms its price point.

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
