My first handmade knife and Bam.......holy cow Batman...........this baby is some special. Nice tall walls,,,more heft than I thought.....super easy to bring back to a razor edge.......oh yeah and the balance is bang on perfect. VG-10 may be the easier thing to put a razor edge on. I left a negative review earlier cause Musashi missed a part of my order and didn't respond to my mail. The latter was apparently because of Japanese holiday. They have by now responded so all should be sorted soon.
Outside of this experience I am very content with the Gyuto knive I use myself and the ones I've ordered as gifts for friends.
I recently bought my 4th and 5th Knives as my collection grows. I purchased the Gyuto and Sashimi to go with my Petty, Nakiri and Santoku I bought last year. The first 3 knives I use daily and have sharpened only twice in the year I have had them. They remain incredibly sharp and true. I do not use the dishwasher for the knives, but wash each by hand and ensure they are dry correctly before storing. The Gyuto is perhaps superfluous given I have the Santoku, but I couldn't resist the bigger brother. I find it well balanced and the extra length is good when cutting bigger bits of meat. The Sashimi is fantastic too, I can get incredibly thin slices of meat or fish with no effort at all. My only wish? That they would do the Bunka knife in the western handle!!
