Kiritsuke・Bunka

Kiritsuke-Messer verfügen über eine der wenigen traditionellen japanischen Mehrzweckklingen und können als Schneide oder Gemüsemesser verwendet werden. Diese schwertförmigen Messer verfügen über eine geradere und breitere Schneide als Yanagi für Gemüse und eine längere Klinge als Usuba zum einfachen Schneiden von Fisch. Der Benutzer muss mit traditionellen japanischen Messern vertraut sein, um dieses einzigartige Design im Kiritsuke-Stil richtig nutzen zu können. Traditionell werden diese Messer nur von Köchen als Statussymbol verwendet.
