Kiritsuke・Bunka

Les couteaux Kiritsuke possèdent l'une des rares lames japonaises traditionnelles polyvalentes et peuvent être utilisés comme trancheuse ou couteau à légumes. Ces couteaux en forme d'épée présentent un bord plus droit et plus large qu'un yanagi pour les légumes, et une lame plus longue qu'un usuba pour trancher facilement le poisson. L'utilisateur doit être habile avec les couteaux japonais traditionnels afin d'utiliser correctement cette conception unique de style kiritsuke. Traditionnellement, ces couteaux ne sont utilisés que par les chefs comme symbole de statut.

Couteau polyvalent doté d'une forme coupée en diagonale, salué dans le monde entier comme un design japonais traditionnel sophistiqué. Idéal pour les travaux détaillés et les évidements en utilisant le tranchant de la lame. Souvent utilisé pour hacher les légumes et trancher le sashimi.
