Bunka knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a Yanagi for vegetables, and a longer blade than an Usuba for slicing fish with ease. The user need to be more skilled with traditional Japanese knives in order to utilize this unique Bunka style design properly. Traditionally, these knives are used only by head chefs as a symbol of status.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

This knife is superb and very, very sharp. The aogami blade is very beautiful, gives it a beautiful character. I have several high end knives that are more expensive than this one, but this became my favorite.

Great knife.

The knife looks like in the picture, beautifully made.
Unfortunately it came with the edge chipped, but it makes no big difference when cutting.
Out of the box sharpness is not very good, but after sharpening it cuts amazing.
Fit and finish are quite good.
The point of balance is on the heel of blade right after the handle. Comfortable for a pinch grip.
The knife is light.
Edge retention remains to be seen.
Overall, i recommend the knife.
