Every Nakiri is forged from Japanese Blue Steel #1, giving you ultimate edge retention and a sharp, long lasting blade. Its attractive Kurouchi finish and beautiful Buffalo Ebony handle give it a unique look and feel. Enjoy improved efficiency and accuracy with every slice.

Mainly used for vegetables with a flat, rectangular blade, a flat tip and a thicker spine. Best for cutting Napa and cabbage into strips. Also suitable for peeling, chopping, rotary cutting, shaving, and making garnish.

Blue Steel #1 is similar to Blue Steel No.2, but the additional Carbon and Tungsten / Wolfram result in even better edge retention and toughness. The steel is perhaps most commonly seen in high-grade Japanese traditional single-bevel edged knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Well made tools make for well made craft

A blade that cuts so clean that fruits and vegetables can be put together as whole again. When cutting proteins with a pull or push stoke cuts are clean an ribbons are easily made. I have been pleased by the knives I have purchased made; I plan on buying more as they are tools for the deft and ambitious hand that holds court in the humility of the “way” of hand craft.
