This Gyuto knife features a Blue Steel #2 blade with a Kurouchi finish for superior edge retention and corrosion resistance. The buffalo magnolia handle offers a comfortable and secure grip for precise and efficient cutting. An overall length of 210mm makes this knife a perfect size for slicing and dicing.

The Gyuto is an all-purpose knife with a pointed tip and a slender blade. The pointed tip enables an easy targeted cut and helps slice meat and fish. It used to be a knife for professional chefs but nowadays is also used by households. Its curved blade helps you apply force to cut food without effort.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Beautiful Knife

So probably there are more expensive knives on Musashi Hamono, but for myself a beginner this is the perfect knife and i can’t complain i come from Europe and also get a Japanese Postcard and some Cherry leaves. Also the Shipment was very fast it came in 5 days what makes it for me one of the best shops i have ever seen. I would recommend those knives they make to everyone let it be a beginner or professional.

Excellent knife

Light and sharp. Very easy to cut if used to rocking motion cutting. Personally I like this kind of non polished finish, but be aware this might no be everyone's cup of tea. Regarding the steel, this is easier to sharpen but it rust easy if you don't dry quickly
