Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

poor quality and service

At the first use of the knife, the tip broque and the blade was totally deformed so that I had to straighten it again. The blade is soft and it was not sharp at all. It seems to me like a defect but no answer from Musashi after sale. It is really a pity and a shame for the reputation of Japanese metallurgy. Seems to me that this shop is a tourist trap and I just lost 200 000Yen on the 5 knife I bought locally.

Excellent knife

I always wanted a japanese knife. This is my first one after countless hours of trying to justify the price for a knife. Until now I had only mid-priced western style knives. But this is surely not the last japanese knife for me.

I was hesitant at first to order from this company because you can't find too much about them, but their online presence made me believe they are legit. And I'm happy that I gave them a chance.

From handle to the tip of the edge this knife is perfect. I feel like I'm holding a masterpiece while cutting my veggies. I hope this knife will serve me well for the coming decades because I sure will take care of it.

Honestly is a pretty fantastic knife. Rounded choil and spine give it a nice, refined feel in the hand. Well balanced for great control. Thin enough with an actual blade length of ~220mm to be a great slicer, like a slightly smaller and taller sujihiki. Unique finish, too, which I think is cool.
