“Kiritsuke” knifes are an all-purpose knife featured a diagonally cut-off tip. Kiritsuke knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a yanagi for vegetables, and a longer blade than an usuba for slicing fish with ease. The user needs more skill with traditional Japanese knives in order to utilize this unique kiritsuke style design properly. Traditionally, these knives are used only by the chefs as a symbol of status.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

I have a question. Which type of stone do you suggest for sharpening the knife and also to keep sharp?
I am an hunter and have moose and deer antlers. Could it be useful to you for creating knife handles?

Great knife with superior edge retention and sharpness

I’ve never tried anything like it, the weight, balance and sharpness is second to none.
The correspondence with musashi has been outstanding as well. Only downside is that the box the knife came in was crushed, most likely by currier though.

A small issue but still really nice

I received the knife with a small chip at the tip and i wasn't too happy but it was small enough that it didn't need a huge amount of fixing, after that its perfect, exactly what i wanted.
