The Kiritsuke Petty Blue Steel #2 Nashiji Stainless Clad Western Handle 135mm is a superior culinary tool crafted from high-grade blue steel #2 with a stainless steel clad exterior. Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

The edge is the carbon steel which is examined good carbon steel, forged and clad stainless. Since the side is stainless steel, it is hard to rust and it is sanitary.

The Japanese term “Nashiji” (English: Pear skin pattern) refers to the result of a technique that appears to leave the surface finish of a blade looking unfinished and rustic.

Good steel

The steel is nice but the handle comes unfinished and will need some filing to get to a comfortable level.

Then steel feels amazing, my issue is that the tang on my knife was not sanded flush with the beautiful blue handle, if you buy you may need a fine rasp file.
