Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

Disappointed

I got the knife and the tip of the blade was chipped and there was a manufacturer defect in one side of the blade, the glue of the wooden handle is obvious and the blue dye is poor quality. Tried to reach out for a refund or a replacement but I got a message on “Zack” asking for photos, I sent him one on the tip of the blade. I haven’t heard from him yet. Wouldn’t recommend this website.

I spent more time than I care to admit looking for a petty knife that was high quality and not crazy expensive and after owning this for about a month I am very pleased. The handle construction is spot on although it could have done with a bit of mineral oil to make the grain pop but this is easily fixed. The knife came hair popping sharp out of the box the edge with absolutely zero need for a touch up on a strop. I have used this knife as much as I can since it arrived and I have noticed no loss of edge so I am very impressed with the Aogami super.

The only criticisms I can make is that I would have preferred to see the spine and the heel of the knife rounded over slightly for a more comfortable pinch grip. This is only minor and the knife is still very comfortable to hold in a pinch grip.

I have noticed a patina developing where the stainless transitions to the Aogami super core steel but by no means is this a criticism and I fully expected this to happen. In fact, I am actually quite excided to see what the patina in the edge will look like in the future think it will add to the aesthetic.

Overall I am very happy with this knife and look forward to each time I get to use it.

Admittedly my first Japanese Steel, but thoroughly pleased! Gorgeous at first glance, well balanced and comfortable. So far used for cutting courgettes, spring onions, and medium sized onions - tasks it performs uniformly and with ease. Highly recommended
