The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. Sliver No.3 Stainless Steel
Sliver No.3 (Hitachi Metals Ltd.) is a very fine-grained Stainless Steel that can attain edge sharpness and edge retention comparable to some High Carbon Steels. It has even been used to create corrosion-resistant versions of Japanese traditional single bevel knives. It is very popular with both professionals and home cooks and is generally believed to be slightly easier to sharpen than VG10.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

Good morning ,

I received the knife, very nice, but I have a problem, I'm left-handed, while the knife is for right-handed people.
can I change it with the same knife for right-handed people?

I own several japanese knifes but this knife was the sharpest off all. Its in use for about one Year now and its stillsuper sharp without any resharpening. The edge-retention is absolutely Incredible and the mirrorpolished blade is a shiny beauty. When i has in in my hand for the first time i was surprised by the unexspected thick handle. But the thick handle makes it even better to handle and allows 100% precise cutting. Great knife and an absolut recommendation!!!
