"Honesuki" is a knife specifically designed for breaking down whole chickens. Its pointed tip allows a chef to get very close to the bone, to remove as much meat as possible. While its triangle shaped heel is perfect for cutting threw cartilage and separating joints. It is also possible to use this knife to break down fish or other meats.

Molybdenum is a competitively Stainless Steel that is very popular with knife producers. They are reasonably priced, easy to sharpen and have excellent corrosion-resistance. Molybdenum also incorporates Vanadium, which further improves the strength, toughness, and edge retention of the steel.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.
