“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

The edge is the carbon steel which is examined good carbon steel, forged and clad stainless. Since the side is stainless steel, it is hard to rust and it is sanitary.

VERY SHARP

Es un cuchillo precioso y muy afilado de gran calidad. Con este tipo de material hay que tener especial cuidado para que no se oxide, pero eso ya lo sabìa yo desde antes de comprarlo. Fue una gran compra.

Haven't used this Santoku a lot, but, by the gods, is it sharp, cut myself twice even just handling it... It is perfectly balanced and fits well in hand, the handle is comfortable and actually quite light, even to toy around with when bored.
To anyone who wants to buy it, do so, it is of high quality and easy to maintain, and even, just aesthetically pleasing to look at, while remaining quite cheap.
