Used to cut raw seafood and beef into thin slices for Sashimi, etc. Often used in Sushi restaurants. It has a long blade on only one side, keeping the food beautifully cut and fresh.

The Honyaki knives can only be made by a few skilled craftsmen in Japan in same method as traditional Japanese sword. It is an art of craftsmanship with Japanese traditional techniques, and features outstanding sharpness and durability. The production is very small, due to the difficulty and time-consuming process.

The mirror finished White Paper (Shirogami) Steel Knife is made from famous Yasugi steel, known as prime high carbon steel, specifically developed for tools and knives.

Its blade is made through Honyaki process, so the edge gets very hard and retains its sharpness for a long time.

The honyaki knives cannot be mass-produced. They are primarily for professional chefs and for the most important person because of the highest quality traditional-style Japanese knives.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

The handles on these knives are Octagonal Oak wood dye Japanese Lacquer (Urushi) that recalls the images of Japanese tradition.

The coating film of Urushi exudes a warm sense of intimacy when in contact with the skin that can almost be likened to the touch of an infant’s skin. With antibacterial and disinfectant properties, it is also provides an exceptional sense of security. urushi is a totally natural lacquer, and with use develops a distinct, deeply refined luster and texture which cannot be reproduced with chemically developed coating materials. This naturally fosters strong feelings of attachment and deference.

Been working as a chef for years and the professional quality knifes do cost a lot but are absolutely worth it if you treat them well. I invest in my workingtools and yes I do need to save up to buy a good quality knife. By now every chef around me also prefer these knifes. But I also have cheaper quality Japanese knifes at home and these are yielded by everyone in my family and these are also a good quality. One word of advice: Buy a sharpening set and learn how to keep your knife in good condition. And love the option to buy all my knifes from one master.
