Bunka knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a Yanagi for vegetables, and a longer blade than an Usuba for slicing fish with ease. The user need to be more skilled with traditional Japanese knives in order to utilize this unique Bunka style design properly. Traditionally, these knives are used only by head chefs as a symbol of status.

Gingami 3 is categorized to stainless steel for its 13-14.5% Chromium blending ratio. Although it’s a corrosion-resistant stainless steel, actual feel of cutting is closer to the high-end carbon steel, The edge is not slippy but significantly grabbing object fibers.

Another reason why professional chef selects Gingami 3 is a good affinity to whetstones at hand re-sharpening. The combination with the soft stainless SUS405 outer layer provides further easiness to the blade sharpening. Neo-Classic Nashiji finish gives irresistible appeal to the series as well. Great steel, wonderful craftsmanship doesn't come all that sharp, so you will definitely need to hone it up a bit, after that it cuts anything with ease just be aware it a stainless clad knife so the edge can rust as long as its wiped down when you put it down it shouldn't have any problems and oil it if not in use for a while
