“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Western Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

AUS-10 Stainless Steel
AUS-10 steel is one of the best steels used to make good-quality knives. It has good edge retention, toughness, hardness, corrosion resistance, and wear resistance. It is very easy to sharpen the knives made of AUS-10 stainless steel and they attain a very perfect edge. The sharpening of AUS-10A steel is easy and can be achieved through different sharpening materials.
Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

The Marine Plastic material in the handle is lightweight and comfortable. All of our Marine Plastic Handles are made from recycled ocean plastics reclaimed from the beaches of Tsushima. Our company wants to make an effort to help clean up the wasted ocean plastics and beaches and to do our best to leave a cleaner world for the next generation. Our process of making these handles is still underdevelopment, as such they sometimes are shipped with minor imperfections.

These new second generation Ocean Plastic handles have a NFC Chips embedded in the end of the handle. If you tap it to your phone it will open a link to our website. Where you can find more information about your knife and our recycled plastic program.

I had the knife for 12 day and got a chip in the middle of the blade. I’m a professional cook that knows how to handle a blade and I’m very disappointed with this unfortunately.
