“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

White Steel No.1 is made by further refining White Steel No.2 and adding more Carbon. The extra Carbon allows it to achieve a slightly higher HRc. than White Steel No.2, but also makes it a bit more brittle. White No.1 is very popular with professional chefs who make traditional Japanese cuisine because it can be sharpened to an exceedingly fine edge, has very good edge retention and is easy to re-sharpen.The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

The Marine Plastic material in the handle is lightweight and comfortable. All of our Marine Plastic Handles are made from recycled ocean plastics reclaimed from the beaches of Tsushima. Our company wants to make an effort to help clean up the wasted ocean plastics and beaches and to do our best to leave a cleaner world for the next generation. Our process of making these handles is still underdevelopment, as such they sometimes are shipped with minor imperfections.

These new second generation Ocean Plastic handles have a NFC Chips embedded in the end of the handle. If you tap it to your phone it will open a link to our website. Where you can find more information about your knife and our recycled plastic program.

Cuts well but rusts easily

This is my first carbon steel knife so I was a bit surprised how quickly it begins to rust (after one day). You really do need tsubaki oil and to wipe it down very thoroughly after each use!
