Treat yourself to the ultimate cooking tool with the Yanagiba Blue steel #2 Suminagashi Buffalo Ebony Handle 240mm. This razor-sharp blade of pure Blue steel #2, featuring a stunning Suminagashi pattern, is perfect for sushi or sashimi preparation, boasting superior cutting performance. The handle, crafted from beautiful Buffalo Ebony, is ergonomically designed to provide a comfortable grip. Be the envy of your kitchen with this stylishly sophisticated knife.

The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. Even the simplest of tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Suminagashi translates as floating ink and refers to the beautiful marbled wave-like patterns that extend through the blade from the tip to the heel, unveiling a new mosaic with every sharpening.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
