Our Menkiri Noodle Knife features high-quality Japanese Blue Steel #2, designed to give you precise and effortless cuts. The nashiji finish ensures a long-lasting durability, performance, and sharpness. The 300mm size is ideal for cutting long, thin noodles used in udon and soba.

"Menkiri" translates to "Noodle-Cut". These knifes are perfect for slicing threw layers of wheat dough and separating individual noodles. The handle is tucked above the cutting edge to allow for a longer blade and a more stable chop.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

The Japanese term “Nashiji” (English: Pear skin pattern) refers to the result of a technique that appears to leave the surface finish of a blade looking unfinished and rustic.
