“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

HAP40 is a powder metallurgy High Speed Tool Steel from Hitachi Metals Ltd. It’s rich chemical composition and fine microstructure allows the production of knives that posses an outstanding balance of hardness, toughness and edge retention. In terms of cutting performance, edge retention, some knife experts believe that HAP-40 is probably the best Japanese cutlery steel on the market.Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.
