A key component of knife care is knife sharpening. Japanese knives should always be sharpened and honed on premium quality Japanese water stones. A good quality Japanese water stone not only is the best surface to sharpen and maintain the blade of your knife, but it is also the best tool to preserve and take care of the the high quality steel.

The best knives require special care and consideration. The steel of a knife from Musashi Cutlery was forged with careful attention by master craftsman heated and quenched through many laborious steps. The final product is a steel that is of the appropriate hardness with enough elasticity for inner structural integrity.

Musashi Toishi Whetstones are much larger than ordinary Japanese whetstones which helps to sharpen more evenly. The wideness of the stone which measures 3 inches across gives more surface area to accurately sharpen longer blades, and at 1 inch in height it has enough material to provide years of use. Weighing over 2 pounds with a sturdy wooden base attached to the bottom, our stones are also more stationary and less prone to slipping making for a safer sharpening experience. Musashi whetstones are also the highest quality water stones available, encapsulating superior sharpening particles that bring out the finest edge of a blade.

Whetstones come in a range of grits:#80 to #500 grit is typically used to repair knives with chipped edges.#600 to #2000 grit are used to sharpen dull knives.#3000 to #6000 grit are finishing stones and are used to refine your knife edge.#8000~ grit are Super finishing stone. If you are using your knife to cut meat it is best to stop at between #4000 and #6000 grit as you can bend your knife edge on the muscle.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
