All-purpose knife with a pointed tip and a slender blade. The pointed tip enables an easy targeted cut and helps easy slicing meat and fish. It used to be a knife for professional chefs but nowadays is also used by households. Its warped blade helps you apply force to cut food without effort.

The Honyaki knives can only be made by a few skilled craftsmen in Japan in same method as traditional Japanese sword. It is an art of craftsmanship with Japanese traditional techniques, and features outstanding sharpness and durability. The production is very small, due to the difficulty and time-consuming process.

The mirror finished White Paper (Shirogami) Steel Knife is made from famous Yasugi steel, known as prime high carbon steel, specifically developed for tools and knives.

Its blade is made through Honyaki process, so the edge gets very hard and retains its sharpness for a long time.

The honyaki knives cannot be mass-produced. They are primarily for professional chefs and for the most important person because of the highest quality traditional-style Japanese knives.

White Steel No.1 is made by further refining White Steel No.2 and adding more Carbon. The extra Carbon allows it to achieve a slightly higher HRc. than White Steel No.2, but also makes it a bit more brittle. White No.1 is very popular with professional chefs who make traditional Japanese cuisine because it can be sharpened to an exceedingly fine edge, has very good edge retention and is easy to re-sharpen.For knives, mirror finishing not only can enhance appearance but also can increase sharpness and durability.
